Shortbread with almonds
Roy René's almond shortbread is a small, crumbly biscuit made from flour, sugar, eggs, butter, almonds and fleur de sel de Camargue. Their light texture and authentic taste make them one of the classics of Provençal biscuit-making.
For over a century, the House has been perpetuating the shortbread tradition, from generation to generation, in its workshops in Aix-en-Provence. Each recipe is based on traditional know-how handed down by the biscuit-makers of Le Roy René, to create simple, tasty sweets.
Sablé is originally a dry, round biscuit that originated in the 17th century. The Marquise de Sablé is said to have brought these biscuits to the court of Louis XIV, where they were adopted and named in his honour. Today, Le Roy René uses Provençal almonds, which add a typical gourmet note to its shortbread.
