Le Roy René's strawberry pavé de pâte de fruits is made from strawberries harvested in limited quantities in Pernes-les-Fontaines, in the heart of the Comtat Venaissin, a historic region stretching across the Drôme and Vaucluse. The fruit is selected from the best local producers, to guarantee consistent quality.

In the company's workshops, the confectioners gently heat the strawberries with sugar and pectin, then stir the mixture in a cauldron. This process extracts the pectin naturally present in the fruit and preserves all the flavours. The resulting dough is cut out by hand using a guitar, then brushed with a brush for a neat finish.

The pavé can be enjoyed on any occasion, on its own or to share. It brings out the full flavour of the strawberries and the supple texture of the fruit paste.
