Roy René iced fruit

The Roy René iced fruit box contains a selection of clementines, sliced melon, white pear, strawberry, sliced orange and pineapple, half peach and lemon. Each fruit is carefully selected to ensure a great variety of flavours and textures.

The preparation of the iced fruit follows a traditional method: the fruit is candied, a process that consists of slowly replacing the water in the fruit with sugar. After candying, the fruit is drained and then covered with a thin layer of sugar. This stage preserves the flavour and softness of the fruit, while preventing it from sticking.

The history of candied fruit dates back to the Renaissance. As early as 1555, Michel de Nostredame, an apothecary in Salon de Provence, described the art of preserving lemons, oranges and quinces with sugar in his Traité des Confitures. Le Roy René is perpetuating this know-how with a box that celebrates this Provençal tradition.
